One-Pot Lemon Garlic Quinoa with Veggies (Vegan & Gluten-Free)
Light, protein-rich, and refreshing
Ingredients:
- 1 cup quinoa (rinsed)
- 2 cups water or vegetable broth
- 1 zucchini (chopped)
- 1 carrot (grated)
- ½ cup cherry tomatoes (halved)
- 2 garlic cloves (minced)
- 1 tbsp olive oil
- ½ tsp turmeric (anti-inflammatory)
- Juice of 1 lemon
- Salt & pepper to taste
- Fresh parsley (for garnish)
Instructions:
- Heat olive oil in a pot, add garlic, and sauté until fragrant.
- Add quinoa, water/broth, turmeric, salt, and pepper. Bring to a boil.
- Lower heat, cover, and simmer for 10-12 minutes.
- Add zucchini, carrots, and tomatoes in the last 5 minutes of cooking.
- Turn off heat, squeeze in lemon juice, and fluff with a fork.
- Garnish with parsley and enjoy!
Ready in: 20 minutes
