Quinoa Biryani
- Chef Urbano White Quinoa -1cup
- Green pea – ½ cup
- Carrot- ½ cup
- Beans – ½ cup
- Oil – 2 tbsp
- Cinnamon – 1 stick
- Fennel -1 tsp
- Cloves – 2
- Bay leaf – 1
- Chopped Onion – 1 medium
- Peeled and diced Tomato – 1 medium
- Curry leaves – 3-4
- Coriander chopped – ½ cup
- Mint – ½ cup
- Turmeric – ¼ tsp
- Chef Urbano Himalayan Pink Salt – to taste
- Coriander powder -1 tbsp.
- Red chilli powder – 2 tbsp.
- Garam masala – 1 tsp
- Green chilli – 2 (slit into lengthwise)
- Ginger – 1 tsp
METHOD OF PREPARATION:
- Wash and soak Chef Urbano Quinoa for 15-30 minutes.
- Heat vegetable oil in a deep pan. Add fennel, cinnamon stick, bay leaf and cloves. Cook and stir until spices are fragrant.
- After it sputters, add sliced onions, chopped green chillies and chopped ginger. Sauté for few minutes.
- Add chopped tomatoes with some Chef Urbano Himalayan Pink Salt. Sauté for a minute and then add all spices (turmeric, red chilli, coriander powder and garam masala). Stir fry them for 2 minutes.
- Then add all vegetables, coriander, mint and curry leaves. Mix it well.
- Pour in two cups of water. Increase the heat to high and bring it to boil. Recover, then reduce the heat to low and cover it for 3-4 minutes. Once the vegetables are 80% cooked then add quinoa in it.
- Remove from heat and discard all whole spices. Top it with chopped coriander and serve hot.
